Bubur Lambuk is synonyms to the month of Ramadhan where folks break fast with this light porridge. Unlike its western 'cousin', the eastern coast of Peninsula Malaysia, namely, the state of Terengganu offer a different kind of Bubur Lambuk and it is laden with varieties of wild shoots such as daun kaduk (wild betel leaf), pucuk manis (sweet shoots) daun kesum and the mandatory midin shoots.(a kind of jungle/wild fern). I had the opportunity to taste it for the first time during off season (not in the month of Ramadhan) during my recent visit to Terengganu early of this year. My sister, Dr S managed to source the daun kaduk, pucuk manis and daun kesum easily but it was not easy to get the midin shoots from the market though it was growing wildly everywhere in the wild. Dr S Bubur Lambuk is not only laden with leaves and shoots but rich with sea protein such as fish and prawns.
First step: Boil the rice with lots of water and grilled the fishes- under done.
